There are entire step by step deployment guides on their site for free. Just look through the Technical Papers and select the one that's most applicable to your scenario. Also any of their engineers are more than willing to speak with you and extremely easy to get ahold of.
To answer your question generally though, for a core install when you're installing StarWind you simply just do the Service installation as opposed to the Full obviously. Then you can install the Management Console on your management workstation where you'd likely already have your other GUI tools. You then create the Witness and CSVs you're wanting for HA.
As far as being joined to a domain, that's not a requirement for anything other than Failover Clustering in Windows if that's what you're referring to.
